These vegetarian seekh kebabs recreate the charm of street-style grills with a wholesome twist. Besan combines with paneer, spices, and herbs to create skewers that are smoky, hearty, and satisfying. Ingredients:

• 1 cup besan

• 1/2 cup grated paneer

• 1 onion, finely chopped

• 2 tsp ginger-garlic paste

• 1 tsp garam masala

• 1 tsp red chili powder

• 1/2 tsp cumin powder

• 2 tbsp coriander, chopped

• 1 egg (optional, for binding)

• Salt to taste

• 2 tbsp oil

Method:

1. Roast besan lightly, cool completely

2. Mix besan, paneer, onions, all spices

3. Add little water to make moldable mixture

4. Wet hands, shape around skewers

5. Grill or pan-fry, turning frequently

6. Cook until golden brown all sides

7. Serve with sliced onions, mint chutney
