Straight from Rajasthan’s royal kitchens, besan gatte is a dish that celebrates spice and tradition. Ingredients:

For Gatte:

• 1 cup besan

• 1/4 cup yogurt

• 1/2 tsp ginger paste

• 1/4 tsp hing (asafoetida)

• Salt to taste

• Water as needed

For Gravy:

• 1 cup yogurt

• 2 tbsp besan

• 1 tsp ginger-garlic paste

• 1 tsp red chili powder

• 1/2 tsp turmeric

• 1 tsp coriander powder

• Whole spices (bay leaf, cloves)

Method:

1. Mix besan, yogurt, ginger paste, hing, salt, add water to make firm dough

2. Roll into thick cylinders, steam for 15-20 minutes

3. Cool and cut into 1-inch pieces

4. Whisk yogurt with besan, add spices

5. Heat oil, add whole spices, then yogurt mixture

6. Add steamed gatte pieces, simmer 10 minutes

7. Garnish with coriander

Result: Rich, tangy Rajasthani delicacy that's restaurant-quality at home.
