Ingredients (makes 2 cutlets)
• 2 tbsp suji (semolina)
• ¼ cup water
• ½ tsp oil
• 1 small, boiled potato, mashed
• 1 tbsp chopped onion
• ½ small green chili, chopped
• ¼ tsp ginger paste
• 1 tbsp coriander leaves
• ¼ tsp garam masala
• ¼ tsp red chili powder
• Salt to taste
• 2 tbsp breadcrumbs (for coating)
• 1–2 tsp oil (for shallow frying)
Method
Cook Suji
• Boil water with salt + ½ tsp oil.
• Stir in suji, cook till thick. Cool slightly.
Mix Dough
• Combine with mashed potato, onion, chili, ginger, coriander, and spices.
• Shape into 2 cutlets.
Coat & Fry
• Roll in bread crumbs.
• Shallow-fry with 1–2 tsp oil till golden.
Serve
• Serve hot with green chutney or ketchup.
