Flavor Notes

Ingredients (makes 5–6 appe)
• ¼ cup suji (semolina)
• 2 tbsp curd
• 2–3 tbsp water (as needed)
• 1 tbsp chopped onion
• 1 tbsp grated carrot (or any veggie)
• 1 small green chili, chopped (optional)
• 1 tsp coriander leaves
• Salt to taste
• A pinch of eno fruit salt (or baking soda + lemon juice)
• Few drops oil (for greasing appe pan)
Method
Make Batter
• Mix suji, curd, water, and salt.
• Rest 10 minutes, then add onion, carrot, chili, and coriander.
Cook Appe
• Stir in eno, mix gently.
• Pour into 5–6 greased appe pan cavities.
• Cook on medium flame till golden both sides.
Serve
• Serve hot with green chutney or ketchup.
Optional Twist
• Add corn or capsicum for crunch.
• Shallow-fry as mini pancakes if no appe pan.
