Texture Test | Rub a pinch of flour between fingers | Sharbati wheat flour is slightly grainy because of bran content. Excessive smoothness could imply fine wheat mix or maida blending- again, not in our process. |
Water Sedimentation | Add a tablespoon of flour to a glass of water, stir and leave to stand 20-30 minutes. | Pure wheat deposits in a thin even layer with a light yellow colour. Separation or floating particles may be an indication of impurities or starch addition. |
Lemon Reaction | Add a few drops of lemon juice | No fizz confirms absence of chemical bleaching or chalk additives. |
Aroma check | Sprinkle flour on a dry hot pan or rub a small amount in the palm of your hand until it is warm. | smell a fresh, earthy wheat aroma, this is the indication of freshly milled grain with bran and germ intact. Improper storage or additives can be indicated by a musty or chemical odour. |
