Nutty roasted suji with ghee’s richness, mild spice from green chili and ginger, aur curry leaves ka earthy aroma — ekdum soulful and homely.
• 1 cup suji (semolina)
• 2 tbsp ghee or oil
• ½ tsp mustard seeds
• ½ tsp urad dal & chana dal (optional, for crunch)
• 1 onion, finely chopped
• 1–2 green chilies, slit
• Few curry leaves
• 1 tsp ginger, finely chopped
• 2½ cups hot water
• Salt to taste
• Fresh coriander + lemon juice for garnish
• Roasted cashews (optional)
Roast Suji
• Dry roast suji in a pan till light golden and aromatic. Keep aside.
Prepare Tadka
• Heat ghee, add mustard seeds, dals, curry leaves, ginger, and green chilies.
• Sauté onion till soft.
Cook Upma
• Add hot water and salt, bring to boil.
• Slowly add roasted suji, stirring continuously to avoid lumps.
• Cover and cook on low for 3–4 mins.
Serve
• Garnish with coriander, lemon juice, and cashews.
• Serve warm with coconut chutney or just as is.
Optional Twist
• Add peas, carrot, or beans while sautéing onions for a veggie version.
• For a richer taste, cook in milk + water mix.
