Flavor Notes
Mustard seeds, curry leaves aur green chili ki tempering deti hai is khichdi ko earthy warmth. Veggies laate hain rang aur crunch, aur daliya soak karta hai saara flavor jaise sponge.
Ingredients:
- ½ cup daliya (broken wheat)
- 2 tbsp moong dal (yellow split lentils)
- 1 tsp ghee
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- Pinch hing (asafoetida)
- Few curry leaves
- 1 green chili (slit)
- ¼ tsp haldi (turmeric)
- Namak taste ke hisaab se
- 1 cup mixed veggies (carrot, beans, peas, etc.)
- 2½ cups paani
Method:
1. Dry Roast Daliya
- Pan mein daliya ko halka golden hone tak bhuno.
- Ek nutty aroma aayega, fir side mein rakh do.
2. Tadka Time
- Cooker mein ghee garam karo.
- Add mustard, cumin, hing, curry leaves aur green chili.
- Chhonk lagne do aur khushboo aane do.
3. Veggies & Masala
- Sabziyan dal kar 2–3 min bhuno.
- Turmeric aur namak add karo.
4. Daliya & Dal
- Roasted daliya + washed moong dal cooker mein dal do.
- Sab kuch mix karo.
5. Cook
- 2½ cups paani dal kar medium flame pe 2 whistles tak cook karo.
- Pressure naturally release hone do.
6. Serve
- Halka sa stir karo aur garma-garam serve karo with dahi ya pickle.
