Flavor Notes

Ingredients (makes 4–5 medium baatis):
• 1 cup whole wheat flour
• ¼ cup semolina (suji) — for crispiness
• 3 tbsp ghee + extra for serving
• ¼ tsp baking powder (optional, for fluffiness)
• Pinch of salt
• Water as needed

Method:

  1. Dough Ready
    • Flour, suji, salt aur baking powder ko mix karo.
    • Ghee dal kar crumbly texture tak rub karo.
    • Dheere-dheere paani dal ke soft dough banalo. Cover karke 15 min rest do.
  2. Shape Baati
    • Dough ko small balls mein roll karo (about golf-ball size).
  3. Bake / Roast
    • Oven: 180°C pe 25–30 min bake karo, midway ghee brush karo.
    • Traditional: Charcoal ya gas tandoor pe slow roast karo until golden brown.
  4. Serve
    • Ghee me dip karke serve karo.
    • Pair karo dal bati ya chutney ke saath.
