Why is this roti sweeter?

That is a question that has been asked in homes over the years. The solution is always the same — Malwa region of Madhya Pradesh, where black cotton soil and golden sunshine combine to produce something really special: Sharbati wheat.

In Sehore and Vidisha, farmers refer to it as meetha gehun. Strangers will say to them, “but wheat is wheat — why call it sweet?”

A farmer laughs and takes a handful of soil. Since this land is living, it does more than feed the grain — it makes it strong, gives it minerals, sweetness you cannot see, but you can taste in every roti.”

What farmers always knew is confirmed by science. Studies have shown that Sharbati wheat may contain higher levels of minerals such as iron, zinc, and magnesium compared to other varieties. However, even before lab reports, families had already observed the difference.

On a dining table, a child bites into a hot roti and asks, why is this roti softer than the others? The parent smiles and brings more: It is Sharbati. It makes you feel full, light, and strong — without the heavy feeling. Sharbati wheat is often valued for its slower energy release, which many believe helps avoid sudden spikes and slumps. Rich in protein and fiber, Sharbati wheat has long been cherished in traditional diets for keeping meals satisfying yet light—its natural starch leaves the stomach comfortable, and the body nourished, without hunger returning too soon.

An old farmer once expressed it very well. Eat two rotis in the morning, and the strength will remain with you till the sun sets. However, Sharbati is not just about nutrition, but it is also about heritage. The minerals of the Malwa soil, the heat of the Malwa sun, and centuries of farmer wisdom are all carried in each roti. That is why Sharbati wheat has not faded with time — instead, its value has only grown, becoming ever more appreciated with each generation.

When you take a bite of Sharbati roti, you are not just satisfying hunger.  You are sipping a narrative of land, labor, love, and legacy.
