Instead of grinding at normal room temperature, spices are cooled to ultra-low temperatures, upto–170 °C, using liquid nitrogen before they are processed. At this point, the spice becomes brittle, and instead of losing its essence to heat, it breaks cleanly. The result? A powder that retains its original oils, vibrant colour, and authentic aroma.
